Red lentil and coconut milk cream soup

1 onion

1 knob of butter or vegetable oil

250 g Mère Nature organic red lentils

398 g Valli organic peeled tomatoes

1/2 tbsp. Mother Nature organic ground turmeric

1/2 tbsp. garam massal

250 mL Imagine organic vegetable broth

200 ml Mère Nature organic coconut milk

Chopped coriander

A pinch of salt and pepper

1. In a saucepan, melt the butter or oil and add the chopped onion.

2. Let sweat a few minutes while stirring.

3. Add the crushed tomatoes, spices and red lentils.

4. Add the vegetable broth.

5. Cook for about 30 minutes over low heat, stirring occasionally.

6. At the end of the cooking add the coconut milk, mix and let simmer for 5 minutes.

7. Serve immediately, sprinkling with chopped coriander and garam massala.
