Ingredients
Vegan, lactose-free, nut-free, egg-free
2 cans (400 g) Mother Nature organic jackfruit
1 can (540 mL) black beans, rinsed and drained
1 tbsp Tex-Mex seasoning
2 tbsp. lime juice
8 taco shells
1 large onion, sliced
1 tbsp. sugar
1 cup guacamole (optional)
Preparation time
Preparation time: 15 minutes – Cooking time: 11 minutes – Quantity: 4 portions
1. Preheat oven to 180°C (350°F).
2. Place jackfruit on a clean cloth. Twist the cloth over the sink to extract as much water as possible. Shred jackfruit.
3. In a large skillet, heat a little olive oil over medium heat. Cook the onion for 4 to 5 minutes.
4. Add the jackfruit to the pan. Sprinkle with sugar and continue cooking for 4 to 5 minutes, stirring regularly, until caramelized.
5. Add black beans and Tex-Mex seasoning. Continue cooking for 1 minute, stirring. Remove from heat. Add lime juice and stir.
6. Place taco shells on a baking sheet. Reheat in oven for 2 to 3 minutes.
7. Top taco shells with jackfruit mixture and, if desired, guacamole.
