Goji berry muffins

Ingredients
1-1/2 cups of flour

1/2 cup sugar

2 teaspoons baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

2 eggs

1/2 cup milk

1/4 cup vegetable oil

1 cup Mère Nature organic raisins

1/4 cup Mère Nature organic goji berries

Preparation
1. Preheat oven to 350°F.

2. Soak goji berries in warm water for 15 to 45 minutes until they swell.

3. In a bowl, combine flour, sugar, baking powder, cinnamon and salt.

4. Add eggs, milk and canola oil and mix well.

5. Add apples or raisins and goji berries.

6. Place paper baking cups in the pans. Add the mixture to ¾ of each paper.

7. Bake about 15-17 minutes or until a dry toothpick comes out.

8. Let cool and sprinkle with a little coconut and a few berries.
