Ingredients
10 peeled apples
3 tbsp. butter
1/3 cup maple syrup
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup brown sugar
1/4 cup clementine juice
4 tsp. cornstarch
2 pieces of pie dough
1 egg yolk beaten with a little water
Preparation
1. Preheat oven to 400°F
2. Peel apples and cut into quarters
3. In a skillet, melt butter over medium heat. Brown the apples for 2 to 3 minutes, stirring occasionally.
4. Add maple syrup, cinnamon, nutmeg and brown sugar to pan. Stir and cook for 1 minute.
5. Remove from heat and let cool, then stir in cornstarch and clementine juice.
6. Divide dough into two equal parts. On a lightly floured surface, roll out one piece of dough. Place dough in a deep 8-inch pie plate.
7. Spread apple filling evenly over dough. Cover with the second piece of dough and seal the edges of both pieces with a fork. Brush pastry with beaten egg yolk. Make small incisions in the dough.
8. Bake for 45 to 50 minutes, until golden brown.
