Ingredients
3 avocados
1 can organic light coconut milk
2 tsp. lime zest
1/4 cup organic lime juice
1/3 cup maple syrup
1/2 cup melted white chocolate
1/2 cup organic shredded coconut
Preparation
1. In a blender, reduce avocados, organic coconut milk, lime zest and juice. Add maple syrup. Puree. Place in freezer until popsicles are firm. Just before serving, unmold and dip the tips of the popsicles in the melted white chocolate and then dip in the shredded coconut.
