Chocolate mousse to fill up on energy

Ingredients
3/4 cup or 200 g Mère Nature 72% dark chocolate chips

1/4 cup or 50 g Mère Nature Turbinado sugar

4 eggs

Preparation
Chocolate is rich in iron, which promotes energy production.
1. Separate the egg whites from the yolks.

2. Add Turbinado sugar to the yolks and mix well.

3. Melt the chocolate in a double boiler over low heat without boiling the water. As soon as the chocolate starts to melt, stir regularly. Let cool and add to the sugar and egg yolk mixture.

4. Whip the egg whites until stiff and add to the chocolate, egg yolk and sugar mixture. Be careful not to crush the egg whites while mixing gently.

5. Serve in ramekins and refrigerate for 4 hours.
