Ingredients
Cake
1 cup of hot milk
2 tbsp. earl grey tea
2 cups all-purpose flour
2 tsp. baking powder
1/2 teaspoon salt
1/2 cup cocoa powder
1/2 cup unsalted butter
1 1/2 cups sugar
3 eggs
1/2 cup semi-sweet chocolate, melted
1 tbsp. orange zest
1/2 cup plain yogurt
Ganache
1 cup semi-sweet chocolate
1/2 cup of 35% cream
Zest of one orange
Preparation
Cake
1. Preheat oven to 350°F and butter a bunt cake pan.
2. In a small saucepan, heat milk and steep tea for 4 minutes. Strain and let cool. Set aside.
3. In a bowl, sift flour, baking powder, salt, and cocoa and set aside.
4. In another bowl, cream the butter and sugar. Add the eggs one by one until the mixture is homogeneous. Add the melted chocolate and orange zest and mix for another minute.
5. Mix in dry ingredients alternately with milk and yogurt. Pour the mixture into the pan and bake for about 45 minutes or until a toothpick inserted in the center of the cake comes out clean. Let cool and unmould.
Ganache
1. Place chocolate in a bowl.
2. In a saucepan, bring cream to a boil and remove from heat. Immediately pour over chocolate and let stand 2 minutes without stirring.
3. Using a whisk, mix until the ganache is smooth.
4. Let cool for 10 minutes. Pour ganache over cake and garnish with orange peel.
