Chickpea salad

1 avocado

1/2 lemon

1 cane organic chickpeas

1/4 cup sliced radishes

1/4 cup red onion

2 cups grape tomatoes, sliced

2 cups diced cucumber

1/2 cup fresh parsley

2 green shallots

1/4 cup Mother Nature extra virgin olive oil

2 tbsp organic red wine vinegar

1/2 tsp. cumin

salt and pepper

1. Dice the avocado and place the cubes in a bowl. Juice half a lemon and pour it over the avocado cubes, mixing well. Add chickpeas, sliced radishes, red onion, grape tomatoes, cucumbers, parsley and green onions. Mix olive oil, red wine vinegar, cumin, salt and pepper. Pour dressing over salad and toss to combine dressing and ingredients.

2. Refrigerate for 1 hour before serving.
